Burns began her television career in 1995 when she was a part of the cast of the Spanish-American teenage sitcom Out of the Blue (1995-1996). She later was a part of Baywatch: Hawaii, the sequel to the Baywatch action-packed series. Burns left Baywatch due to the first pregnancy she had. Brooke Elizabeth Burns has been an exercise model on TV as well as an actor for more than ten years. The most well-known role she has played is that of Jessie Owens of Baywatch. She's best known for playing Shallow Hal in the 2001 commercially-successful film.
